
Tex-Mex Chops
- 1 tsp oil
- 4-5 pork chops
- 1.5 cup chunky salsa
- 1/2 cup chopped green chilies
- 1/4 cup shredded mild cheddar cheese
- Heat oil over med-high heat in skillet
- Brown chops on one side about 2 minutes (mine took about 5 mins to brown any)
- Turn chops and add salsa & chilies
- Mix well and reduce heat to low.
- Cover & simmer about 8 minutes
- Uncover and sprinkle cheese over pork chops
- Cover and simmer 2-3 additional minutes
